In case you are wondering: Amaranth grains were once considered a staple food in the Inca, Maya and Aztec civilisations. It is classified as a pseudocereal, meaning that it’s not technically a cereal grain like wheat or oats, but it shares a comparable set of nutrients and is used in similar ways. Its earthy, nutty flavour works well in a variety of dishes including with Bennetto dark chocolate and added sea salt. Made with Arriba Nacional cacao beans from Hacienda Victoria in Ecuador, this 85% dark chocolate is surprisingly mild and not bitter at all. It has a lovely, creamy mouthfeel and soft, nutty flavour notes with a chocolatey aftertaste.

Hacienda Victoria is a 500 hectare cocoa plantation about 30 minutes from Guayaquil, with ideal climate and superb environmental conditions, along with a sustainable and socially responsible crop management that begins in their nursery and ends in the drying of beans after careful fermentation. It is at Hacienda Victoria that they are bringing the lush forest back to life, bringing back the tradition of growing the world’s best cacao.
